Some of my favorite meals that I’ve come across, or made up myself, over the years…
- My Creamy Vegan Aloo Gobi – At long last! I finally managed to figure it out!
- Spicy Tofu Pad Thai – My own creation. This has become a staple in my house.
- Carrot Bisque – From my awesome best friend. I believe this is originally from the Post Punk Kitchen?
- Chocolate Peanut Butter Pillows – From The Post Punk Kitchen. The most amazing cookies on the planet.
- Butternut Squash Risotto – AMAZING!!! Every time I think about this recipe I want to go make it right that second. (NOTE: this recipe calls for parmesan cheese, but could easily be made vegan by substituting a little bit of nutritional yeast or vegan parmesan cheeze instead)
- Frozen Banana Peanut Butter Fruit Dip – So easy to make and absolutely delicious!
- Vegan “Crab” Cakes – OH.MY.GOODNESS. That’s all I have to say.
- General Tao Tofu – A vegan version of General Tso’s. From VegNews.
- Spelt Burgers – From Angela at Oh She Glows.
- Kale, Pears, and Quinoa – Adapted from Vegan Dad
- Chocolate cake with peanut butter frosting – A standard amongst our group of friends.
- Pan Fried Tamari Tofu Sandwich – My favorite lunch
- Smlove Pie – From Veganomicon. WOW.
- Lentil Walnut Burgers – From Angela at Oh She Glows. Best burgers EVER. Make a double batch. You’ll be sorry if you didn’t. Also, this burger is absolutely incredible with avocado on top. Try it. Trust me.
- Almond Butter – Also from Angela at Oh She Glows (I’m sensing a trend here…). I am so in love with this stuff, it’s ridiculous. If you want your friends to never leave you alone, make them this. They will pester you for more for all eternity.
- Dill pickle cashews – I was so sad when Target discontinued these, that I made my own.
- Sweet potato and black bean enchiladas from Oh She Glows – I double the amounts of sweet potato and enchilada sauce and it’s HEAVENLY. These are one of our favorite go-to meals. I usually make a big pan of 8 of them and we’re happy for days. They reheat great, and also freeze well.
Vegetarian LCHF/Keto Recipes (all non-keto meat-eater approved):
- Eggplant lasagna – from KetoDietApp. I like to add in chopped up zucchini and broccoli as well.
- Pesto zucchini noodles with sun dried tomatoes, olives, avocado, and feta – from KetoDietApp. The recipe doesn’t call for feta, but I added it anyway and loved it. I made the avocado pistachio pesto that is called for in the recipe. Delicious! If you don’t have a spiralizer, I highly recommend this one. Worked like a charm on the first try.
